baked shrimp scampi is on the menu

shrimp scampiOMG…it’s that good! I’m obviously on a shrimp binge. I think this is the third shrimp recipe in less then a month. Hope you don’t mind; I wouldn’t share if I didn’t think it was something you just had to try.

I’m a huge fan of  Ina Garten on the Food Network. In fact, I’m a little obsessed with her. I just think she’s the Bomb Dizzle! Any-who, she’s the inspiration behind the recipe. I would have followed her directions exactly, but I discovered after I got home with the shrimp that I didn’t actually have all the ingredients. I made a few modifications that turned out absolutely delish!

The key to mine turning out so good is all about quality shrimp and perfect homemade seasoned breadcrumbs from my local Cardiff Seaside Market. In fact the breadcrumbs are so key in this recipe that you may even want to contact me to see if I can get some to you?       I never mind sharing. My big problem is over sharing most of the time. So, here is the scoop on my recent diet. I’m not really over weight, but I do have to manage my weight from time to time. Additionally, I have an auto-immune decease that I don’t really talk about (because it sucks) and I’m not here for a pity party, but it does cause my diet get out of control and I start gravitating to soft foods, like bread, pasta and more bread. So…having said that Brad and I juiced for three days with no bread, pasta alcohol etc. With both dropped weight and it helps put us back on track. I’m back to eating normal, but paying close attention.

    Thank you for answering! I’m sorry to read about your auto-imune disease, I hope you have it “under control” . I would also like to loose 2 or 3 pounds ( especially before Christmas) 🙂 My hubby has been working on a diet but it’s too rough for me!
