Banana muffins, on the menu

banana muffinsLet no brown banana go to waste, in fact the browner the better. Once I see I have three bananas hanging around a little too long, I stick them in the fridge for a couple days until I feel like heating up the oven. With the fires this last week, these bananas had to wait at least three extra days for me to want the heat in the kitchen.

Recipe:
• 1 1/2 cups sugar
• 2 cups flour
• 2 eggs, beaten
• Pinch of salt
• 1/2 cup butter
• 1/2 cup milk
• 2 tsp. baking powder
• 3 1/2 pureed bananas, very ripe
• 1 tsp. baking soda (add to pureed bananas)
• 1/4 tsp. vanilla

Cream together the butter, sugar and eggs. Shift flour several times and add salt and baking powder to the flour. To the creamed butter mixture, add milk and flour (alternating). Add the vanilla and mashed bananas (with the baking soda added to the banana puree). Blend and cook 350` 20 to 30 minutes. Do the toothpick test.
