I hope you like salads, because I’m thinking I need to be eating nothing but salad for a couple of weeks. It goes like this…Susie left for Park City and while in route she received an invitation that requires a tropical flare. Susie doesn’t have bikinis, shorts or tank tops in Park City. She has fur boots and snow ski gear. Being Susie’s best-y and close to the same build it is my call to duty to try on bikinis for her, take pictures of myself and send them off for approval “Eeeek and oh shit!” They say the camera adds 10 pounds…they are liars. It has to be 15 pounds, for sure! I’m not big on diets, but I sure know what it takes to get into a bikini and clearly I have a little work to do. So I’m taking you on a little sidetrack journey for a couple of weeks. We are going to be loving lots of salads and a little kick in the butt workout schedule.
Salad day one: Butter lettuce, edamame for protein (careful ½ cup is 100 calories), one sliced nectarine, a sprinkle of chopped candied pecans, ¼ of an avocado sliced, a sprinkle of goat cheese and a light drizzle of vegan honey mustard salad dressing (you can do one tablespoon of dressing and dilute it with a little olive oil to keep it light). I had an early dinner…It was divine and completely satisfying. NO Starchy carbs. Xoxo
PS, I over-nighted two supper skimpy and cute bikinis to Susie. She will rock them.
