  1. Combine all the ingredients in a large bowl. When all the ingredients are combined well, spread the mixture evenly over the bread. Bake at 325`degrees for 20 to 25 minutes. Cut into portions about two inches wide. Serve with warm marinara.

    super bowl food, only in a healthy way

    It sucks to see the football season getting ready to come to an end.  I love afternoons with the TV roaring, Brad yelling in the background and me working on the upcoming weeks posts in the kitchen…occasionally getting my tipsy on.  It’s like my perfect world.

    This is not to suggest that I’m not excited to see the two coaching brothers playing against one another. Talk about good gens?  Seriously, “how does that even happen?” Any how-San Francisco and Baltimore in New Orleans, February 2, 2013. Wow, it will be fun and memorable to watch.  Now, what to eat? Chips, pizza, more chips; or not…

    mondays menu chicken pot pie

    One of my favorites and so easy…

    • One package of Pillsbury pie crust
    • 2 Cooked white chicken breasts cut
    • 1 package of frozen peas and carrots, microwave to cook
    • 1 can of chicken broth
    • 1/2 cup of milk
    • 1 Tablespoon of butter
    • 2 Table spoons of flower
    • Pepper to taste

    Roll out the dough and use a bowl to form your round shape. Line the small pie dishes with the cut dough.  Fill the shells with the peas, carrots and cooked chicken.  To make the gravy heat the butter to melt and stir in the flower then set it aside.  In a sauce pan, heat the chicken broth and milk.  Once the broth is almost to a boil whisk in the flour butter mixture, whisking constantly until thickened.  Poor the mixture over the chicken and vegetables. Cover with another circle of dough and cook as per dough directions.  It’s that easy…
