I’m not certain how many of you noticed I have been MIA for about three weeks. I totally appreciate the concern and your thoughtful e-mails. You are all so sweet and I’m grateful to have you here with me. I’m fine, I just needed to take the pressure off myself and concentrate on several projects.
So, having said that…I’m back and ready to share a couple of new ideas, recipes and DIY projects.
Today you have a new recipe, cauliflower crust pizza and it’s super delicious. You don’t even know you are cutting back the starchy bread carbs and replacing it with cauliflower.

Cauliflower Pizza Crust:
1 medium head of cauliflower
1 egg lightly beaten
¼ cup Parmesan cheese
¼ cup shredded Italian cheese blend
¼ cup Panko bread crumbs
1 teaspoon herbs of Provence
salt and pepper to tastse
Place the pizza stone or baking sheet in the oven. Preheat oven to 425~. Wash and cut the cauliflower into smaller pieces. Grate the cauliflower in a food processor with the cheese greater attachment.
Place the grated cauliflower in a microwave safe bowl with 2 tablespoons of water, cover and cook on high for 3 to 4 minutes. Line a bowl with a dry cotton lint free towel and place the steamed cauliflower in the center. Twist and ring out all the water. The cauliflower needs to return to being dry, so it takes a little work.
Transfer the dry cauliflower to a bowl and combing the above ingredients. Press and mold you crust onto parchment paper and slide onto your preheated pan. Bake the crust without toppings for about 12 to 15 minutes or until golden brown. Remove from oven a top with your favorite pizza toppings and place back in the oven for another 5 to 8 minutes.
Topping:
I used a store bought alfredo sauce and any combination of veggies I had on hand, lightly sautéed.
