So, with the official arrival of cold weather in California, I’m craving some good old comfort food. What I really wanted to make was white cheddar mac and cheese, but I decided to go a little healthier with creamy…cheesy asparagus risotto. Risotto is another one of those grains that can be turned into an entire meal by just adding to it. This recipe is supper easy and turned out so delicious! Here are a couple of secretes that make the recipe work perfect. Use a good dutch oven, like Le Creuset. I’m so smitten with mine that I leave it out on the stove so I can oogle it. Don’t skimp on cheese. Good cheese is a must, like Tillamook. No pre-shredded package crap…please. Go get comfy and bon appetit! Smooches xoxo
