This past weekend during one of our walks,Brad and I stopped in the local Whole Foods market to grab a bite for dinner. “We are really loving the beach life and walking just about everywhere.” Whole Foods has a special everyday and Saturdays special was smoked chicken and smoked corn. It sounded good to me…It turns out the chicken is a bit too strong in flavor for me, but the smoked corn was packed full of savory deliciousness and inspired me to create sweet corn cakes with smoked corn. I found the initial recipe on Food Network and then modified it just a bit to get the sweetness. They were delicious! I made a few extra and had them with honey butter for breakfast. Enjoy!
