Hey Loves, Happy Tuesday! I’m so happy to have you here with me today.
So, jumping right in, I have a little story about how these little cucumber thing-ees came along “I have know idea what to call them.” In fact that gives me an idea…how about you name them? Come-on, help a girl out and send me your suggestions? Please?
Any-who there I go side winding to my point. So, Friday night was the darling, amazing, charming Encinitas Christmas Parade. It is the cutest thing in the world. The whole town shows up. The city closes off the coast hwy to cars and people come in the thousands with their beach chairs, picnics, children and dogs to line the streets. It’s parade perfection! I will take pic next year…sorry!
As usual when we are having a local event, my house is the obvious gathering spot. It wasn’t about me doing a big deal dinner, because the point of getting everyone here was to hit the town and the parade.
I made a pretty cool little spread including the yummy little cucumber thing-ees. They are like a carb-less replacement for lox’s and beagles. We ate and drank everything in sight…as in everything. The house looked like a frat house by morning with bottles and food carnage everywhere. LOL, we had a blast!
2 Cucumbers
1 Package of smoked salmon lox’s
¼ Purple onion chopped
1 Block of cream cheese room temp
2 Tablespoons of chopped dill
1 Lemon squeezed
1 Tablespoon capers
Salt and pepper to taste
Peel and cut the cucumber into one half inch slices. In a bowl combine the cream cheese, lemon juice, dill, onion and capers. Add salt and pepper to taste. Dollop the cream cheese mixture on top of the cucumbers and then top with a small piece of Salman. Skewer with a tooth pick and enjoy!
