Hey Loves, Happy Wednesday. Are you hungry for cheesy enchilada deliciousness? What’s really even better than the taste is how darn easy it is to make. I bought all my ingredients at Whole Foods. If you don’t have a Whole Foods, peruse your local store for organic canned enchilada sauce, beans etc. Smooches and enjoy!
Here’s what you need:
1 LB of organic free range ground turkey
1 Package of seed grown organic corn tortillas
1 Organic sweet onion chopped
1 Can of organic mild chili beans
1 Can of organic black beans
1 Can of organic enchilada sauce
1 Small can of organic sliced black olives
2 Cups of organic grated cheddar and jack cheese
1 Tablespoon of olive oil to sauté the onion
Salt and Pepper to taste
Preheat the oven to 350~ Sautee the diced onion in olive oil until golden brown, then add in the ground turkey and cook until crumbled and brown. To the cooked turkey add in one can of chili beans, one can of black beans and one can of enchilada sauce. In a dry pan toast the corn tortillas until cooked.
To make the layers, lay down one tortilla then meat sauce combo, then cheese. Repeat this process until you run out of room. Cook for about 30 minutes or until heated through. Serve with a dollop of sour cream and garnish with cilantro. Enjoy!
