¼ TBL. butter
¼ Cup of milk
2 TBL. flour
¼ Cup canned mild green chilies
¼ Cup sharp cheddar cheese
½ tsp dry mustard
Salt and Pepper to taste
Preheat the over to ~425. Place the butter in a ramekin and set inside the warm oven. Let the butter melt and then remove the ramekin from the oven. Whisk together the eggs, milk, flour and seasoning. Pour the egg mixture into the melted butter and distribute the cheese and chilies into the mixture. Place in the oven and cook 25 to 30 minutes. Serve with salsa and sour cream. YUM!
That is exactly what I was thinking. If my Hubby does another restaurant, these are for sure going on the morning menu.
