grilled balsamic artichoke

IMG_6865-1024x662I cannot believe I have not done these for you yet. I had to actually search my own blog…what a dork I am! Any-who, this is my knock off version of the grilled artichokes from The Cheesecake Factory…only better! Enjoy…IMG_6773-1024x733

Snip off all the points and trim the stalk. Spread the leaves and wash the artichoke and lay on a paper towel to drain. Place the artichokes in a large steam pot. Drizzle the artichokes with a little olive oil and season with salt and pepper. Steam until tender; I start checking after 20 minutes and be sure you don’t run out of water “oooch…burt pot.”

Remove the artichokes from the steam pot and bring them to room temperature. Once they are room temperature, refrigerate them overnight or until well chilled.

Take the chilled artichokes and cut them into half’s or quarters and remove all the fuzzy stuff “I don’t know what that’s called.” Brush them with olive oil and balsamic vinegar and place them cut side down on a grilling pan. Grill the artichoke until slightly charred.

For a dipping sauce, mix 3 tablespoons each of mayo and Greek yogurt. Add a tablespoon of balsamic, salt and pepper and lemon. Combine until smooth and creamy.xoxo, Julie

  1. Yum! They look so perfectly roasted and delicious. I’ve never cooked artichoke myself- I’m intimidated by it I guess, and was never really sure how to cut it. This looks pretty easy though, so I’ll have to try it out.
