inpire me with chocolate mint marshmallow pops

I made these little Nestle chocolate mint marshmallows to hand out for Saint Patrick’s Day.    Are giant marshmallows  always available?  This is the first time I have ever noticed them.  The marshmallows size is what inspired me to do something with them.   It took about 3 minutes for Myles, Mimi and Brad to discover that they make an excellent tool for food fights.  We had giant marshmallow bombs flying for hours.   I’m actually still a five year old at times.    I’m keeping giant marshmallows on had for those moments when know one expects the attach.   Make everyday an event.  xoxo

How to make chocolate mint marshmallows:

  • 1 bag of giant marshmallows
  • 1 splash of mint extract
  • 1 bag of small chocolate chips
  • 1 bag of white chocolate chips
  • 1 tablespoon crisco
  • candy sticks, bags and ribbon

Melt the white chocolate chips in a double boiler with one tablespoon of Crisco.  Remove from heat.   Dip the marshmallow into the melted chocolate, covering the bottom half of the marshmallow.  They roll in the small chocolate chips.  Lay wax paper to set.  Dip the candy stick in the chocolate and push into marshmallow to set.  Put in refrigerator for one hour.  Let come to room temp before bagging.
