I’m really not the biggest fan of kale, but when I saw this recipe on the blog, a tasty love story; I had to try it. For starters, it’s beautiful and the only modification I made was to use packaged pomegranate seeds and my own candied pecans. It was Awesome!
Directions:
Wash and remove the stems from the kale. Chop the kale into small pieces. Wash the apples and slice them into thin slices and toss them in lemon juice to keep them from browning. Lightly chop the candied pecans and set aside. Seed one pomegranate or buy 1 small container of pomegranate seeds. Combine the salad ingredients in a salad bowl, reserving some of the pomegranate seeds for the dressing and to top the salad.
Blend the salad dressing ingredients in a bullet or blender. Poor the dressing over the salad, toss and top with extra pomegranate seeds and serve.
