Hi Loves, Happy Tuesday! I’m totally surprised that I have never posted this recipe before. I had to go back and search my own site and can’t believe I have held out on you so long. Seriously…I’m sorry!
This is my go to easy low carb alternative to traditional spaghetti. Replacing pasta with spaghetti squash eliminates all of the starchy carbs.
Here’s the scoop on what you need:
One organic jar of good pasta sauce
One large organic spaghetti squash
One box of pre-cut organic mushrooms
One half of an organic sweet onion diced
One pound of ground sirloin
Two tablespoons of olive oil
A splash of red wine (as long as there is still enough for you)
One teaspoon of swerve natural sweetner
Salt and pepper to taste
Cooking directions for the spaghetti squash here. The squash should be cooking while you are working on the sauce. Season and cook the ground sirloin and set aside. In a sauce brown the diced onion in the olive oil. Once the onion is brown, add in the mushrooms. Cook the mushrooms for about three minutes. Add in the jar of spaghetti sauce, a splash of wine, the swerve and the ground beef. Cook on medium until heated through.
Plate the shredded spaghetti squash, top with meat sauce, Parmesan and serve. Enjoy and smooches. xoxo
