This is always a favorite at my house and so easy to make. I’m a busy girl. So, I need fast food that is fast and easy to pull together. I do cook the boneless, skinless chicken breasts ahead of time. I simply bake four seasoned chicken breast in about a half inch of chicken broth for 35 minutes at 350`. - 2 cups cubed cooked chicken
- 2 ribs of celery chopped
- 3 granny smith apples, pealed and cut into cubes
- 1/2 cup chopped walnuts
- 1/2 cup cheddar cheese “maybe a little extra” ;0)
- 1/3 cup mayo {or split, half mayo, half yogurt}
- 1/2 fresh lemon juice
- 1/4 tsp dry mustard
- add seasoning
Serve on a bed of butter lettuce. Nice pairings are tomatoes and corn muffins .
