mondays menu, apple chicken salad

This is always a favorite at my house and so easy to make.  I’m a busy girl.  So, I  need fast food that is fast and easy to pull together.  I do cook the boneless, skinless chicken breasts ahead of time.  I simply bake four seasoned chicken breast in about a half inch of chicken broth for 35 minutes at 350`.  Check out the rest of the easy, light recipe below.   • 2 cups cubed cooked chicken
  • 2 ribs of celery chopped
  • 3 granny smith apples, pealed and cut into cubes
  • 1/2 cup chopped walnuts
  • 1/2 cup cheddar cheese “maybe a little extra” ;0)
  • 1/3 cup mayo {or split, half mayo, half yogurt}
  • 1/2 fresh lemon juice
  • 1/4 tsp dry mustard
  • add seasoning

Serve on a bed of butter lettuce.  Nice pairings are tomatoes and corn muffins .
