Butternut squash lasagne recipe from one of my favorite foodie blogs, Proud Italian Cook. I followed her recipe exactly and it was complete deliciousness. I’m not completely certain I would call this lasagna, but it sure was a nice healthy alternative to pasta. I lightened the recipe with all light ricotta and one percent milk.
