mondays menu, butternut squash lasagna

Butternut squash lasagne recipe from one of my favorite foodie blogs, Proud Italian Cook.  I followed her recipe exactly and it was complete deliciousness.   I’m not completely certain I would call this lasagna, but it sure was a nice healthy alternative to pasta.  I lightened the recipe with all light ricotta and one percent milk.  Recipe click here…  Make everyday a event.  xoxo               {bush with olive oil and a little salt and pepper}
