monday’s menu, coffee cake

Who doesn’t like a moist yummy slice of coffee cake?  Every now and then, you just gotta have a warm bite…or two.  I think this recipes  is older then me.  I originally got it from my  mom (my huge inspiration).  She got the recipe from an old Assistant League cookbook  and recently I asked Nana if she had a recipe I could include in a cookbook I was making for all my girls.  Her recipe is exactly the same . So, this is a classic for every generation to enjoy!  Live on,  love always and don’t forget to take a small taste along the way.  xoxo

  • 1/4 lb butter
  • 1 cup sugar
  • 2 eggs
  • 1 pint sour cream (low fat)
  • 2 cups of cake flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1 dash of salt
  • 1 tsp. vanilla
  • filling
  • 1/3/ cup sugar
  • 1 tsp cinnamon
  • 3/4 cup chopped walnut
  • 3/4 cup chocolate chips (milk)

Cream the butter with the sugar.  Add eggs and sour cream.  Sift together cake flour, soda, baking powder and salt.  Add the creamy mixture and mix in the vanilla.  Mix ingredients together.  In a greased and floured angel cake pan put a layer of dough then a layer of filling.  Repeat until the last layer is dough.  Bake 350` for 40 minutes.  Always do the toothpick test.
