These may be my new favorite cookie. Mimi made these thumbprint cookies with royal icing a week or so ago. I put them in an adorable little bird glass pastry keeper. The were amazing and lasted for several days until I eat every single one… I am so lucky to have Mimi and really appreciate her sweat contributions to our home. Thank you Mimi! These are so pretty. How do you get the shape to remain when baking without jam. I have tried thumbprint cookies with icing,adding icing after they are cool and the thumb print does not seem to remain, the cookies do not stay true to shape when I bake even using parchment paper. Do you have any suggestions?

I’m not sure what is different about these thumb print cookies, but we did push the center in prior to baking and they came out fine. Some of the cookies did rise a bit leaving just a little space for the frosting. Maybe you can make the thumb shape go as deep into the cookie as possible prior to cooking. I hope it works for you.
