organic heirloom mozzarella sandwich

IMG_7737-1024x682We had a great Memorial Day with friends at the beach.  You can’t sit at the beach all day without a little something to munch on.  So,  I made these heirloom mozzarella sandwiches.  They were delicious!

I toasted the buns with a little olive oil.   Then coated the buns with basil pesto from Trader Joe’s, layered sliced heirloom tomato, buffalo mozzarella and Organic Girl baby arugula tossed with a little olive oil and my favorite LuLu cherry balsamic vinegar.  I individually wrapped them for perfect snacks at the beach.  Enjoy!
