This is such an easy dinner. I’m sorry the pictures are not the best quality. Not only was I tired and didn’t feel like cooking, I also didn’t feel like taking the time with my pictures. Sorry! I prefer fresh seafood most of the time, but when I’m tired or not in the mood to plan a meal I always have frozen salmon on hand. Pair the salmon with a spinach salad and new potatoes and you have an easy delicious dinner. xoxo
Preheat the oven 350`. Clean, cut and slice the new potatoes toss in a bowl with seasoning and a little melted butter. Place them on a cookie sheet. These will take about 30 minutes to cook. For the Salmon, coat with olive oil, fresh dill, fresh lemon, salt and pepper. These little steaks cook pretty fast, about 20 to 25 minutes. Put the potatoes in about 10 minutes before you put the salmon in the oven. While those two are cooking, wash the spinach and prep the salad. For the dill sauce, I use fage yogurt, lemon, fresh dill, salt and pepper.
