How gorgeous are the colors in these peppers? Truly beautiful and so good for you. This is a hearty meal that is really easy to make. The recipe is below and the peppers are from the Farmers Market. I serve them on a bed of rice pilaf and lay the pepper on it’s side. Enjoy! xoxo
- 6 bell peppers
- 1 lb lean ground sirloin
- 1/2 chopped saute sweet onion
- 2/3 can beef broth
- tomato paste
- salt and pepper to tastes
- herbs of Provence
- mozzarella cheese
Preheat oven 350`. Brown onion in a little olive oil, add ground sirloin and cook until done, drain the meat and put back in the pan. Add the beef broth and about 2 to 3 tables spoons of tomato paste, season. Mix in grated mozzarella. Stuff into cored peppers, top with a slice of mozzarella. I use large muffin tin to hold the peppers upright in the oven. Cook the peppers for about 30 minutes. Serve with rice pilaf.
