These enchiladas are so easy and really delicious. Also, super en-expensive and can be a one dish meal. You can add chicken and rice if you want. Actually you can put anything in a tortilla and make it a meal. Enjoy! xoxo
{saute mushrooms and zucchini}
- 5 organic wheat tortilla
- jack cheese
- one sweet onion saute
- to zucchini chopped
- one package pre-cute mushrooms
- on can or jar of Verde sauce
Preheat over 350`, saute onion until brown, add mushrooms and zucchini, add a little olive oil. Continue to saute until cooked. Poor some of the Verde in the bottom of casserole to coat. Stuff enchiladas with cheese and veggie mixture. Wrap and secure with a toothpick. Poor the remaining verde sauce over the top, sprinkle with cheese and work about 25 to 30 minutes in a preheated over. Top with sour cream and tomatoes.
