Hey Loves, Happy Monday…I haven’t been blogging mush lately, because I’m just so darn busy. However, when I find something that makes my life easy or better, I feel it’s my duty to share. I’m smitten with this spiralizer. Seriously, it has cut my prep time in half if not better. You have seen me prepare zucchini spaghetti by using a peeler to create stands. This is soooo much better! It has a million functions and foods like apples and potato’s. I can’t stand having too may kitchen gadgets, but I will gladly get rid of 10 things to keep this one item. This is not an advertisement for my new gadget. This is me turning you onto something I think you must have.
What you need:
3 Zucchini
1 Tablespoon butter (substitute cocoanut oil or EVO)
1 Lemon
½ Sliced sweet onion
1 box/bag of pre-cut mushrooms
Cilantro garnish
How to recipe:
Spiral your zucchini with my new favorite kitchen gadget and set aside. Melt the butter or oil in a pan on medium to high heat. Add in the cut onions and cook until brown. Add the mushroom and cook for about 4 minutes or until the mushroom are partially cooked. Then add the zucchini and squeeze in the juice of one lemon. Toss and heat through about 3 minutes. You don’t want the zucchini to overcook. It should have a slight crispness to it. Poor the mixture in a serving bowl and garnish with lemon and fresh cilantro.
