If you are anything like me, you’re  all about starting better habits in the New Year. This would include eating healthier and well…dropping those extra LBs? Are you with me?

So, here you go…let’s start off with a super yummy organic salad that serves as a full meal and satisfies all that you could possibly crave. I really loved this and hope you love it too! Smooches and xoxo

Salad with orange chicken.

Oange chicken salad with jam dressing and glaze.What you needSalad:
Organic chicken breast, boneless, skinless
4 Organic oranges 2 to slice and 2 for the juice
Organic baby spinach
½ Cup Organic dried cranberries
½ Cup Organic goat cheese

Glaze:
2 Tablespoons Organic orange marmalade (Whole Foods)
¼ Cup Organic barbeque sauce (Whole Foods)
1 teaspoon Organic Honey
1 squeezed orange
Salt and pepper

Dressing:
½ Cup Organic olive oil
1 teaspoon Organic Champagne vinegar
1 teaspoon Organic orange marmalade (Whole Foods)
1 teaspoon Organic barbeque sauce (Whole Foods)
1 teaspoon Organic Honey
1 squeezed orange
Salt and pepper

Orange chicken salad dressing.recipePreheat the oven to 350~ Wash and dry the chicken. Cut slices along the chicken breast about 1 ½ inch apart, but not all the way through and place half slices of orange into the sliced chicken and place in a casserole dish. Combine the glaze ingredients above and poor over the chicken. Cook the chicken for 30 minutes or until completely cooked through. I like to place the chicken under the broiler just before service to brown the glaze, but it’s not required.

Combine all the dressing ingredients in a bullet or blender. Place the spinach in a bowl and toss with the dressing. You may not need all the dressing, so watch to make sure you don’t over due it. Place the spinach on a plate and arrange the remaining items, cranberries, orange wedges, goat cheese and sliced chicken. Enjoy!
