Hey Loves, Happy taco Tuesday! Please don’t think I’m lame, because I am not the first to come up with minute meals or skinny salads. I already know this, but when I do something as simple as this and it’s so easy and delicious, I just want to share it with you.
So here it goes…I always have arugula in the house and usually quinoa. I stopped by Whole Foods on the way home from a little bike ride and oh-ya a quick stop for a happy hour margarita with my main squeeze Brad and grab some pre-cooked salmon.
I get home and turn the oven on low. Throw a drizzle of teriyaki sauce on the salmon and stick it in the oven to warm. I then start the water boiling for the quinoa that takes 20 minutes to cook.
• Drizzle arugula with olive oil salt and pepper to taste
• Dollop of quinoa on the bed of arugula
• Slice salmon around the edges
Seriously, it doesn’t get any easier or better than that, right? It is delicious, healthy and skinny. Life is a lot of work dinner doesn’t have to be. Smooches loves hope you enjoy! xoxo
