Howdy loves! Although California is still summer hot, fall is in the air. Pumpkins are growing along the Coast Hwy and the pumpkin stands are popping up everywhere. The big house with the giant spiders is all decked out in the spookiest way. I love-love-love this time of year.
So with fall comes warm and gooey food and the craving of comfort. This recipe will not disappoint you. I promise; this is delicious spicy savory yum! Smooches enjoy!
What you need:
4 Sweet potato’s peeled and cubed into equal pieces
¼ Cup butter
2 Tablespoons of butter
Savory seasoning, like maple pepper and salt
2 Cups Chicken both
Sour cream garnish and about ¼ cup into smashed potato’s
½ Cup Half and half
2 Tablespoons maple syrup
1 Tablespoon chipotles adobo sauce or more for really spicy
Instructions:
Preheat the oven to `425. Peel, cut and cube the sweet potatoes. Melt 2 tablespoons of butter and toss in with the sweet potatoes. Sprinkle the potatoes with savory seasoning, salt and pepper, roast in the oven until golden brown. Once the potatoes are golden brown, smash them and run through a ricer. Add butter, half and half, sour cream and chipotles adobo sauce and mix to make mashed sweet potatoes. Add the mashed potatoes to a source pan and over medium heat add chicken both. Stir until combined and heated through. Garnish with sour cream and fresh herbs
