I love football and I love game day food even better. However, that doesn’t always present healthy choices. Sure you can have the usual raw veggies available, but I always want something a little more filling, but don’t want to pound down a pizza or sandwich. I do love a BLT, but don’t want the bread carbs. So…here you have it; an ABLT without the bread. Super bowl yum!
Cooked apple wood smoked bacon
Small ripe avocados “these are about the size of a plum”
Cheddar cheese crated
Equal parts mayo and Greek yogurt
Season with salt and pepper to taste
Cut the avocados in half and cover the avocado in lemon juice to keep it from browning. Reserve the bacon for the topping. Combine all the ingredients in a bowl. Stuff the avocado and place under the broiler for just a minute to get the cheese to slightly melt. Top the avocados with bacon and place on a lettuce cup.
