Hi Loves, Happy Monday. You know this is the only time of year I actually like Mondays, because I’m addicted to the bachelor and bachelorette. Am I alone… or does anyone else have to get his or her Monday fix?

This year Chris is a so likeable and such a nice guy, but has anyone noticed he has a huge head? I mean seriously, he’s so cute, but that head is as big!

Oh-there I go on a tangent sorry about that.

Let’s talk Valentines Day and hot and spicy breakfast in bed. Don’t freak out; I’m not going to describe anything hot and spicy except for my crazy delicious corncakes with spicy cayenne strawberry honey butter.

Sweet corn cakes

Okay, here’s the scope and the recipe. The other day, I was craving these little corn bread toaster thing-ies from when I was a kid, but can’t find anything like them anywhere. So, the light bulb over my head shows up and POW I get this great idea “hmmm, I think I can make corn pancakes with a good old bag of Marie Calendars cornbread mix.” When I discover that it works fantastic, I then come up the spicy strawberry honey butter. I think this is the perfect Valentines Breakfast in Bed. I hope you enjoy! Smooches xoxo

Valentines heart shaped spicy corn cakesWhat you need:

• 1 package of Marie Calendar’s cornbread mix (follow the directions)
• 2 Tablespoons of butter (one to coat the pan, one for the strawberries)
• 1 Tablespoon of honey
• 1/8 teaspoon Cayenne pepper
• 10 Strawberries
• Cinnamon and powder sugar to dust

Recipe directions:

Combine the package of cornbread with the recommended amount of water. Heat a non-stick pan on medium and coat with butter. Coat the cookie cutter or pancake mold with butter and set into the pan. Spoon just enough cornbread mixture in to cover the bottom of the mold. These cakes rise and you want to make sure it rises in the mold so it doesn’t spill over the top.

Once you see bubbles starting to rise, it’s time to carefully lift off the mold and flip the corncake. It should be lightly browned on both sides.

In a spate bowl, wash and dice the strawberries. Add the butter, honey and Cayenne pepper. Place into a small saucepan and heat until melted. Spoon the strawberry honey onto the corncakes and dust with cinnamon and brown sugar.
